Strawberries With Balsamic Syrup And Mascarpone Cream
This bold berry dish requires very little time to make, taking just 10 minutes to prepare and even less time to cook. The balsamic vinegar really enhances the strawberry flavour, especially when made into a sweet syrup. And, when served with a creamy mascarpone topping, you have the makings of a great post-meal treat for four.
Ingredients
300g strawberries
50g caster sugar
4 tablespoons balsamic vinegar
150ml whipping cream
150g mascarpone
2 tablespoons icing sugar
1 small handful basil leaves
Method
- Hull the strawberries (remove the green top and core).Slice and place in a large bowl.
- Place the sugar and balsamic vinegar in a small saucepan over a medium heat, and bring to a gentle simmer. Cook for 5 minutes, until the volume reduces by half.
- Whip the cream, mascarpone and icing sugar together, until you have a thick, creamy, spoon-able mixture.
- Spoon the strawberries into serving bowls. Drizzle over the balsamic syrup, and top with a spoonful of mascarpone cream and a few basil leaves.
