            Christmas Punch

            Pack a punch over the holiday period with this Christmas punch, destined to be savoured in front of a fire or on a crisp winter walk. Inspired by refreshments found at German markets, this punch consists of tea, red wine, rum, lemon, and orange. Simple to recreate at home, this festive drink is rich, warming, and will fill your home with seasonal scents. This recipe will serve 12 and takes 45 minutes to prepare and cook.  



            • 225g caster sugar
            • 900ml strongly brewed black tea, hot
            • Juice of 4 lemons
            • Juice of 3 oranges
            • 8 cloves
            • 1 cinnamon stick
            • 2 bottles red wine
            • 225ml rum

            • To Serve
            • Lemon and orange slices



            1. In a large pan, mix together the sugar and tea. Add the lemon juice, orange juice, cloves and cinnamon stick. Stir until the sugar dissolves completely.
            2. Add the red wine. Heat the mixture until it just comes to the boil, then turn the heat off. Let it sit to infuse for 30 minutes.
            3. When you’re ready to serve, gently heat the rum in a separate pan, being careful not to let it boil. When hot, add to the tea and wine mixture.
            4. Remove the cloves and cinnamon stick. Pour the punch into mugs, and serve it hot with fresh lemon and orange slices.
